Jerk Chicken With Caribbean Rice

Slow cooked jerk chicken with Caribbean infused rice with tiny kidney beans…

Ingredients:

4 chicken breasts
1 teaspoon of thyme
1 crushed garlic clove
Oil
1 teaspoon basil
2 medium onions,
1 red pepper,
1 green pepper,
black pepper & salt to taste
1 teaspoon chilli flakes
1 tin of chopped tomatoes
Plain flour
1/2 pint of water
1 bottle of reggae reggae sauce
uncle Ben’s carribbean rice (Aldi’s)




Directions:

Dice 4 chicken breasts, add a teaspoonful of thyme, 1 crushed garlic clove, 10mil of oil coat all the chunks then add 2 dessert spoons of plain flour coat the chicken. then put 10mil of olive oil in a large frying pan and brown the chicken diced 2 medium onions, 1 red pepper, 1 green pepper, season with black pepper and salt and a few chilli flakes add to the chicken and fry for 5 minutes then add a tin of chopped tomatoes with a teaspoonful of basil 1/2 pint of water bring up to the boil and simmer for 5 more minutes then add 1 bottle of reggae reggae sauce bring back to the boil then turn off and transfer it to a pre warmed slow cooker…when it’s all in the slow cooker stir pop the lid on and cook for 2 hours on high. After 2 hours get to bags of uncle Ben’s Caribbean rice (Aldi’s) have it. loosen the grains in the bag and tear open and microwave both bags for 2 minutes then add to the slow cooker stir and cook for another 10 minutes then serve with tortilla chips salsa sauce and sour cream and a slice of garlic bread. it was lovely xxx
