Ingredients

  • 1½ cups dried lentils, brown or green, rinsed and sifted

  • 2 cups chopped celery (or 4–5 stalks)

  • 1 cup chopped onion (fresh or frozen)

  • 6 cups low sodium vegetable or chicken stock

  • 1 can (14.5 ounces) diced tomatoes, including juices

  • 1 teaspoon salt, or to taste

  • ½ teaspoon black pepper, or to taste

Amish Lentil Soup: Instructions

  1. Place the slow cooker on a flat, clean surface. Scatter chopped celery evenly on the bottom.

  2. Spread the chopped onion on top of the celery.

  3. Rinse lentils with cool water, removing any small stones or debris. Pour the lentils over the celery and onion, covering the vegetables evenly.

  4. Pour in the broth and the can of diced tomatoes with their juice. Stir gently to moisten all ingredients.

  5. Season with salt and black pepper, stirring once more. Cover the slow cooker with the lid.

  6. Cook on LOW for 7–8 hours or HIGH for 3½–4 hours until lentils are tender and celery is soft.

  7. Adjust consistency by adding more hot broth or water if needed. Add extra salt or pepper according to taste.
