Dry the beef chuck roast with paper towels and chop into big pieces, about the size of your palm.

Rinse the baby potatoes thoroughly, keeping skins intact.

Oil the interior of your slow cooker lightly. Sprinkle the baby potatoes evenly at the bottom.

Sprinkle 1 teaspoon kosher salt over the potatoes.

Place beef pieces on top of the potatoes in a snug layer.
