Slow Cooker Shepherds Pie

Slow Cooker Shepherds Pie tonight, wish me luck lol

Ingredients:

1 TBSP olive oil
Lamb mince 500g
1 medium onion – diced
1 medium carrot – diced
1 fennel stalk as I don’t like celery – diced
1 tin of diced tomatoes
1 TBSP gravy mix
1 TBSP tomato sauce
1 TBSP Worcestershire sauce
Cheese (optional)

For the mash
4 decent size potatoes
Milk
Butter
Salt and pepper for taste

Directions:

Heat up the pan with the oil then put the fennel, carrot and onion until soft then add mince until brown.

Put the mince, fennel, onion and carrot into the slow cooker then add the diced tomatoes, gravy mix, Worcestershire and tomato sauce.

Stir to combine, put it on for 4hrs on low and stir frequently (I’m going to do it every 45min-1hr)
In the last 45 mins or so I’m going to peel and cut the potatoes and put it in the pot to boil with salt until soft, empty the water and then add milk, butter, salt and pepper depending on how thick or smooth you like it.

Go to the slow cooker and if the mince mixture has a bit of liquid in it you can either spoon it out or do the corn flour trick. When you are satisfied you layer the mash potato evenly and you can sprinkle cheese on top (optional). Then you cook for another hour or until cheese is melted.
