Slow Cooker Coconut Pie Very happy with the outcome. It formed three layers – the coconut top, custard & the base.
Ingredients:
2 cups of milk (I added one cup of coconut milk and one cup of milk
1 cup of coconut
4 eggs
1 teaspoon vanilla
1/2 cup of plain flour
120gram butter (I used low cholesterol margarine)
(next time I will add a little less)
3/4 cup of castor sugar
Nutmeg to top
Directions:
1. Blend milk, coconut, eggs, vanilla, flour, & butter mix together
2. Line slow cooker with baking paper ( double layer the paper in opposite direction so it is easy to lift out)
3. Pour mixture into slow cooker directly onto the baking paper
4. Sprinkle nutmeg on top
5. Cook on low for 2 hours
6. When cool cut into squares & serve with cream, ice cream or custard or enjoy alone.
