Slow Cooker Lamb Shoulder With Red Wine

Slow cooker lamb shoulder in red wine sauce with vegetables – this made roughly 6-7 meals. Hi all, this is what I cooked tonight. First slow cooker meal this year and turned out bloody delicious. (pretty sure I remembered all the right directions that I did – also forgot to put the spinach in the bowl before the final photo)

Ingredients:

1.3 kg boneless lamb shoulder
1x cup of red wine (Shiraz)
2x cups of beef stock
2x tablespoons of tomato paste
5x cloves of garlic (cut up finely)
4x Bay leaves
4x stalks of rosemary (cut up finely)
1x onion (cut up finely)
2x carrots (chopped into small sized bits)
1x capsicum (cut into 1cm bits)
4x gold potatoes (cut into 2cm bits)
1x sweet potato (cut into 2cm bits)
1x bag Spinach
Pepper
Salt
Plain flour (approx 2x tablespoons)
Garlic butter
2.5 tablespoons Cornstarch

Directions:

1. In a pan melt some garlic butter, place in carrots, onion and garlic and brown them. Put in tomato paste and about a teaspoon of flour, and stir. Put in red wine and let it bubble for a minute. Put in stock, 1/2 rosemary, pepper, salt and bay leaves and then stranger all to slow cooker.
2. Pat lamb with paper towel to dry, then coat (very lightly) in some flour, pepper and salt. Tap off any excess. Melt some butter in pan and brown each side of lamb.
3. Place lamb on top of sauce in slow cooker. Turn once to coat in sauce.
4. Place slow cooker on low for 9 hours.
5. An hour before the end of the slow cooking, Cut up potatoes and capsicum. Put potatoes in microwave safe bowl with some water and put in microwave for 3-4 minutes.
6. Coat potatoes in oil and rosemary and place in oven. Golden : approx. 40mins (until crunchy). Sweet : 20-30mins and capsicum : approx. 20mins until charred.


7. When meat is done (falling apart) take out of slow cooker and keep warm.
8. Whisk the cornstarch with a bit of cold water in a small bowl until you have a thick yet pourable paste.
9. Place rest of slow cooker liquid into pan and let it boil. Put in Cornstarch and stir until thickened.
10. Serve meat, sauce, vegetables plus spinach.
