Ingredients:

2.1kg pumpkin
3 carrots
1 onion
1 sweet potato
5 potatoes
3 cups chicken stock
2 teaspoons minced garlic
ground black pepper

Directions:

I roasted the veges to bring out their flavor, then added to the slow cooker with 3 cups of chicken stock & 2 teaspoons minced garlic for 4 hours on low. Very easy to mix with the stick blender as the veges are so soft.
I serve with a dollop of sour cream & crusty bread.

Question: If you roast the veggies aren’t they then cooked and don’t need to go in the slow cooker? Just wondering.

Answer: it brings out the flavour so much more and is yummier. Have done both ways in the past and this is my preference.

Question: How many does this one serve please?

Answer: hmmm – I’m
not exactly sure. I should measure it next time. It’s definitely made enough for 8-10 people with a ladle or two per person. I’d say at least 2 litres but probably more. My soup is quite thick.

Question: How long did you toast the veggies for?

Answer: for about 35 mins.

Question: do yourself a favour and roast a whole bulb of garlic (wrapped in foil) with your veggies for about 30 minutes, cut the end off and squeeze the garlic into your soup…makes an amazing difference.

Answer: yep know about this way of garlic but when you don’t have any, minced garlic (as I added) does the job too!

Question: How long did u roast veggies and how did u leave in slow cooker for

Answer: I roasted the veggies for about 30 – 40 mins and in the slow cooker for 4 hours on low.

Question: Did you blend the veges after they had been in the slow cooker?

Answer: Yep as mentioned above. You still make it like a normal soup.

Question: If you roast the garlic in their skins until soft the minced and add creates a whole different taste.

Answer: Yep I’m aware of that method, but when you don’t have fresh garlic, minced is perfectly fine to use too.

Question: I am trying this out at this moment but then I realized how long did you roast and what degrees.

Answer: I roasted for about 35 mins on 180.
