Leek and potato soup, one chunky for me & one smooth for my son (if he knew what was in it he wouldn’t eat it, safe to say it went down a treat )
Ingredients:
2 table spoons of butter
2 leeks chopped
1 large onion finely chopped
2 large potatoes chopped
2 pints of vegetable or chicken stock (I used both)
1 bay leaf
Directions:
Sauté the leeks & onion in the butter for a few minutes, then throw those & everything else in the slow cooker on low for 6 hours. Season to taste. Either wiz or leave chunky.
