Hungarian Beef Stew

My sons choice for dinner as it’s his birthday, he decides to have porkolt (Hungarian beef stew)
His grandparents were Hungarian and used to make it on occasion. I learnt to it cook years ago and for this time cooking it adapted it for my slow cooker. It’s usually cooked for about 6-7 hours on a stove. So here’s hoping it works out. ?? it’s a large mix as it’s feeding 5-6 people with left overs

Ingredients:

2kg beef diced (gravy or chuck)
3 tins regular sized diced tomatoes
2 tablespoons Hungarian sweet paprika
3onions sliced
3 capsicums sliced
1 teaspoon salt
2 tablespoon olive oil
1 1/2 cans water approx (2 1/2 cups)

Instructions:

Roast paprika in pan on stove for about 30 sec – 1 min to bring out more flavor. Add oil and onions. Cook onions with paprika for about 3-4 mins over high heat. And to coat onions in the paprika. Transfer into slow cooker
(My slow cooker can be used on stove top so I did it straight into it to save washing up.)
Add in diced beef, tomatoes, salt and capsicums. Mix through. Now add water and mix through but only enough to come about half way up the mix, mine was 1 1/2 cans (tomato cans)
Stir couple times during cook time to ensure even cooking of meat.
This is a trial for me as I usually do it on the stove, so I’ll let you know how it go’s
Cook on low for about 9-10 hours. This is a rich stew and is filling. I’ll cook up some gnocchi to serve.

I ended leaving lid off to reduce for 2 hours. If you want to serve with mash potatoes then I’d recommend reducing even more or adding half the water at the start.
I left it with more liquid as I add in the gnocchi which absorbs excess liquid anyway.
