Buttery Beef and Potatoes In Slow Cooker 4 Ingredients. This rustic feast is a melt-in-your-mouth dinner made with just four ingredients. Tender beef chuck roast and baby potatoes are slow-cooked in butter to create a rich, flavorful meal perfect for family dinners.

Ingredients

  • 3 pounds beef chuck roast, cut into big pieces

  • 2 pounds tiny or baby gold potatoes, rinsed and kept whole

  • 1 cup (2 sticks) unsalted butter, in pieces

  • 2 teaspoons kosher salt

Buttery Beef and Potatoes: Instructions

  1. Dry the beef chuck roast with paper towels and chop into big pieces, about the size of your palm.

  2. Rinse the baby potatoes thoroughly, keeping skins intact.

  3. Oil the interior of your slow cooker lightly. Sprinkle the baby potatoes evenly at the bottom.

  4. Sprinkle 1 teaspoon kosher salt over the potatoes.

  5. Place beef pieces on top of the potatoes in a snug layer.

  6. Sprinkle the remaining 1 teaspoon kosher salt over the beef.

  7. Place butter pieces evenly on top of the beef and potatoes.

  8. Cook on HIGH for 4–5 hours or LOW for 8–9 hours, until beef is tender and potatoes are soft.

  9. After cooking, stir gently from the bottom to coat beef and potatoes with melted butter, without mashing the potatoes.

  10. Pull beef into large, coarse chunks with forks and let soak briefly in the buttery broth.

  11. Put the beef and potatoes in bowls and pour some of the buttery broth over them. Sprinkle with freshly chopped parsley before serving.
