Smoky Maple and Barbecue Hassleback Chicken
This recipe is combines many of my favourite things chicken, bacon, cheese, barbecue sauce – what’s not to love!? served over creamy mashed potato.
Ingredients:
4 large chicken breast fillets
4 rashers maple flavoured streaky bacon
4 slices extra sharp cheddar cheese
1 cup smoky barbecue sauce
1 tablespoon maple syrup
1 teaspoon smoked paprika
Method:
Make 4 cuts along each breast fillet, about two- thirds of the way through. D o not cut all the way through to the chopping board. Cut each bacon rasher crossways into 4 triangles. Place a piece of bacon and triangle of cheese into each of the cuts in the chicken.
Combine the barbecue sauce, maple syrup and paprika in a small bowl. Pour in to the slow cooker. Carefully add the chicken.
Cover & cook on low for about 4 hours.
Serve with as much ( or as little ) of the cooking sauce ) as you like.
