I made a slow cooker meatloaf mix last night.
My 18yr old son was in charge of wrapping & cooking it today while I was at work, and an awesome job he did!
It tasted fabulous.
Ingredients:
1kg beef mince
I zucchini, onion, celery stick, capsicum finely chopped
2 bullet chilli finely chopped
Fresh basil, parsley, rosemary, oregano finely chopped
Approx 1 tbspn of crushed garlic & seeded mustard
2 eggs
1/2 cups of panko bread crumbs
SAUCE
Tomato & bbq sauce, brown sugar & seeded mustard mixed together
Mix altogether (i sat it in fridge overnight but can cook straight away)
Mould into breadloaf shape & wrap in foil
Cook on low for 4hrs
Add sauce on top & let cook for 30 mins, turn off & let it sit before serving
