My husband has been told to loose weight for his upcoming surgery so I made this slow cooker veggie soup in my Breville 7 litre? Meal Maker.
Ingredients:
1kg Tomatoes- diced
1/2 cauliflower
1/2 head of broccoli
1/2 bunch Silver Beet
1/2 bunch Kale
1 Brown Onion
2 Carrots
1/4 Cabbage
1 Red Capsicum
4 large mushrooms
4 cloves of minced garlic
Small piece of Grated Ginger
2 cups of beef stock
2 cans of Ol El Paso Mexi Beans for protein
Sprinkle of Keens Curry Powder
Cracked Black Pepper
Method:
Cut all vegetables up roughly & cook on high for 4.5 hours. He said it was delicious. It came in at under $20 & there would be 8 – 10 serves at a guess.
