Slow Cooker Dinner. One of those easy type dinners!
Ingredients:
1 kg thigh fillet
400-500 mls tomato based sauce (I used Dolmio)
375 ml tin evaporated milk (light & creamy)
1 tbsp cornflour
1 tsp crushed garlic
Low 6 hours
Season with salt and pepper.
Directions:
Served here with tagliatelle pasta but next time I’ll use fettuccini as it’s a thinner pasta.
Once cooked I removed the chicken and stick blended the sauce. I then tossed the cooked pasta through the sauce and then added the chicken again before plating up.
I stick blended as I used evaporated milk which tends to separate a bit. You could also use cooking cream which shouldn’t split. I didn’t have any cooking cream.
