Slow cooker Beans with Chorizo

Ingredients:

2 x medium onions diced
3 x LARGE garlic cloves
1 x large jar your favourite tomato pasta sauce
1 x cup chicken stock or water
1 x tin chopped tomatoes
2 x tin red kidney beans
1 x tin cannellini beans
3 x chorizo diced
1/2 tsp dried chilli flakes (can be left out)
2 tsp ground cumin
1 tsp ground coriander
1 teaspoon maple syrup/brown sugar/golden syrup




Directions:

Throw it all in. Season with salt and pepper.

Cook 8 hours on low/4hrs on high

For dinner: serve with rice or corn chips
For breakfast: poach some eggs on the top of the beans while on high until they’re done to your liking.

Served 3 adults and had enough left to dish up 4 lunch meals with rice for the freezer for hubby’s next shift run.

Question:    Can it be frozen?

Answer:    Definitely can be frozen. A perfect dump bag and make ahead meal.
