Cozy Crockpot Beef Stew

Ingredients 🥩

  • 2 lb beef chuck, cut into cubes
  • 4 carrots, sliced
  • 4 potatoes, cut into small pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons oil

Directions 👩‍🍳

  1. Add some oil to a frying pan and turn the heat up to medium-high. Add the beef chunks and cook them until all sides turn brown, stirring so they cook evenly.
  2. Move the browned beef into your crockpot. Add the sliced carrots, diced potatoes, chopped onion, and minced garlic on top of the beef.
  3. Sprinkle in the Worcestershire sauce, dried thyme, salt, and black pepper, then stir everything together gently so the flavors mix well.
  4. Pour the beef broth into the crockpot until it covers most of the beef and vegetables.
  5. Put the lid on the crockpot and cook on LOW for 7 to 8 hours, or on HIGH for 4 to 5 hours, until the beef feels soft and tender when you poke it with a fork.
  6. Taste the stew and add a little more salt or pepper if you think it needs it.
  7. Scoop the stew into bowls and serve it warm. Enjoy every cozy, comforting bite!
