Ingredients

  • 1 medium head of cabbage, chopped into bite-sized pieces
  • 6 slices of bacon, chopped into small pieces
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon black pepper
  • ½ teaspoon salt (adjust to taste, since bacon is salty)
  • ½ teaspoon paprika
  • 1 tablespoon brown sugar (optional, for a hint of sweetness)

Slow Cooker Cabbage with Bacon: Cooking Method

  1. In a skillet over medium heat, cook the chopped bacon until it turns crispy. Remove it and set aside, keeping a bit of the rendered fat in the pan.
  2. Sauté the sliced onion and minced garlic in the leftover bacon fat for about 2–3 minutes until fragrant.
  3. Place the chopped cabbage into the slow cooker, then add the sautéed onion and garlic on top.
  4. Pour in the chicken broth and apple cider vinegar, then sprinkle in the pepper, salt, paprika, and brown sugar.
  5. Add most of the cooked bacon, saving a little for garnish.
  6. Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the cabbage is tender.
  7. Give it a good stir, taste and adjust seasoning if needed, then top with the reserved bacon before serving.
