Simple Independence Loaf – Slow-Cooker. This slow cooker poor man independence loaf is a warm, filling, and cheap dinner that families can make often. It uses a few pantry and fridge items, puts them into the slow cooker, and makes a soft meatloaf with very little work. Ingredients

  • 2 pounds ground beef

  • 1 box (6 ounces) dry stuffing mix

  • 1 can (10.5 ounces) condensed cream of mushroom soup

  • 2 large eggs

  • 1/2 cup ketchup

Simple Independence Loaf: Directions

  1. Lightly grease a 5- to 6-quart slow cooker or put in a slow cooker liner for easy cleanup.

  2. Put the raw ground beef in the slow cooker and break it up a little so it spreads evenly across the bottom.

  3. Sprinkle the dry stuffing mix evenly over the ground beef.

  4. In a small bowl, whisk the cream of mushroom soup, eggs, and ketchup until smooth, then pour this mix over the stuffing.

  5. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the center reaches 160°F and the loaf is cooked through.

  6. Let the loaf rest 10 minutes so it firms up and slices better.

  7. Slice and serve warm with mashed potatoes, buttered green beans, sweet corn, rolls, or your favorite sides
