This creamy queso blanco beef dip mixes cheesy queso, seasoned beef, and spicy diced tomatoes into one warm, crowd-pleasing snack. Made in a slow cooker with just six easy ingredients, it needs very little hands-on work. Perfect for parties, game days, or movie nights, this dip is rich, cheesy, and always a hit with guests.

Ingredients

  • 1 pound fatty ground beef
  • 1 jar (15 ounces) white queso blanco dip
  • 1 can (283g) diced tomatoes with green chillies, undrained
  • 1 can (4 ounces) diced green chiles
  • 1 packet (1 ounce) taco seasoning
  • 1/2 teaspoon garlic powder

Slow Cooker Queso Blanco Beef Dip: Directions

  1. Place the beef into the slow cooker along with the rest of the ingredients. Take the raw ground beef and break it into a few large chunks, then place it into the bottom of your slow cooker. Pour the jar of queso blanco dip right on top of the beef, spreading it out a bit with a spoon. Next, add the can of diced tomatoes with green chiles (don’t drain the liquid — it adds flavor), then the can of diced green chiles. Sprinkle the taco seasoning and garlic powder evenly over everything so the flavor spreads through the whole dip.

  2. Cover and cook the mixture on low heat. Put the lid on your slow cooker and set it to cook on LOW for 2 to 3 hours. About halfway through, lift the lid and give everything a good stir so the cheese doesn’t stick to the bottom and the beef cooks evenly. Keep cooking until the beef is fully browned all the way through and the whole dip is hot and bubbly.
  3. Break up the beef and stir until smooth. Once the beef is fully cooked, use a spoon or a potato masher to break it into small, bite-sized pieces. Stir everything together really well so the cheese, tomatoes, and beef blend into one smooth, creamy dip. If the dip still looks too thick or chunky, let it sit on low heat a little longer, then stir again until it turns soft and creamy.
  4. Switch to warm and serve. When the dip is smooth and fully heated, turn your slow cooker to the WARM setting. This keeps the dip at the perfect temperature for serving. Bring it to the table hot, along with a bowl of chips or fresh veggies for dipping, and let everyone dig in.
