I would judge on how much chicken your children would eat as adults we have a breast each best way of working it out with added mushrooms and peas and depending what curry powder you use , i only use mild as I don’t do spicy myself, my grandsons love it but remember it does have the peanut butter in just incase of any intolerance, this recipe serves 4 adults, you can always add more coconut milk/ chick stock/ water if you want it to go further, if too much pop remaining in freezer.

Satay chicken curry absolutely delicious third time I’ve had it and a favourite with the family,

Ingredients:

400ml tinned coconut milk,
200ml chick stock,
4tbs smooth/crunchy peanut butter,
2tbs mild curry powder,
3-4 chicken breasts cut up into cubes,
1 large onion chopped
Mushrooms and peas can be added if desired

Directions:

Just throw everything in slow cooker give a good stir, place tea towel under lid and put on low for 3 and half – 4 hrs, I add peas for last 5 mins of cooking, give it a stir after first half hour incase the peanut butter hasn’t dissolved into mixture and enjoy I’m sure you will 🤞🏼if it ends up too thick you can always add a splash of water or drop more stock.
