Slow Cooker Meatloaf with BBQ Sauce
In a Jug mix:
1 Cup Tomato Sauce
1 Cup BBQ Sauce (Smokey flavour is best but not necessary if you don’t want)
2 Cups hot water with Mix coffee in this water)
2 Teaspoons Coffee Powder
4 Tablespoons Malt Vinegar
2 Tablespoon Worchester Sauce
¾ Cup Brown sugar
2 Tablespoon Cornflour
Whisk together till well combined and leave to the side and now prepare the meatloaf in another bowl
In a Bowl mix:
500g Beef mince
500g Sausage meat
(If you do not have/like sausage meat, just substitute it for another 500g beef mince)
Pinch salt/pepper
1 egg
2 Teaspoons Curry Powder
1-2 Onions chopped finely
¼- ½ Cup tomato sauce
1 Cup Rolled Oats
Directions:
Combine all these ingredients in a bowl and mix till well combined, if you find the mix too sloppy add another ½ cup of rolled oats, If you find recipe too thick/hard add either another egg OR a squirt of tomato sauce till you like the consistency.
Once you have made the sauce and the meatloaf mixes, cover the bottom of your slow cooker with the sauce you prepared and then shape your loaf in your slow cooker, Pour ¾ of the sauce over the meatloaf and leave to cook with lid on, on HIGH. After 5 hours of cooking on high, pour the remaining sauce in and turn on low (you can leave on high if you wish, it doesn’t matter if you do).
