Slow Cooker Honey Garlic Chicken with sticky rice and broccoli.
I thought I’d share my favourite chicken slow cooker recipe.
Ingredients:
◾️700g of boneless and skinless chicken thighs
◾️85ml dark soy sauce
◾️85ml honey
◾️2 tbsp tomato purée
◾️4 cloves of chopped garlic
◾️1 tbsp rice vinegar
◾️2 tbsp cornstarch
To serve
◾️rice (I used tilda sticky rice packets)
◾️toasted sesame seeds
◾️chopped spring onion
◾️any veg that takes your fancy (I chose tender stem broccoli)
Method :
Place the chicken in the bottom of your slow cooker.
In a measuring jug or bowl, whisk together the soy sauce, honey, tomato paste, garlic, & rice vinegar.
Pour over the chicken. Cover & cook on HIGH for 2.5 to 3 hours.
If you are available, then flip the chicken over once halfway through to coat both sides.
Once cooked shred the chicken with two forks & plate up with your rice, veg, sesame & spring onion.
