Onion Gravy (Pork Roast) 4 Ingredients Amish Slow Cooker. It is a law school trick, taught to me by my mother, of making this melt in your mouth Sunday dinner, and it takes only 4 ingredients to make the richest flavor.

3-4 pounds of pork boneless shoulder or pork butt roast

2 (1-ounce) packets onion soup mix dry

2 huge, yellow onions peeled and cut in thin slices

2 cups low-sodium beef broth
Onion Gravy (Pork Roast): Directions

Using the yellow onions, thinly slice them into uniformly spaced slices beginning with the root and sprinkle them on the surface of the bottom of the slow cooker with a capacity of 5-7 quarts. These will become soft and practically melt into the gravy upon cooking.

Add one packet of dry onion soup mix all over the cut onions in the slow cooker to flavor them and begin creating the foundation of the onion gravy.

Blot off the pork roast using paper towels. Directly place the roast on the onion layer in the slow cooker with the fat side facing upward. This enables the fat to baste the meat during the cooking process.

Sprinkle the second packet of dry onion soup mix all around the top and sides of the pork roast, pressing it in slightly so that the mix sticks to the surface. This two-layered cover seasons the meat and the resulting gravy.

Pour beef broth around the sides of the roast in the slow cooker, trying not to rinse the soup mix off the meat. It should not entirely cover the sides of the roast but rise above it.

Cook in the slow cooker with its lid on: on LOW for 8-10 hours, or on HIGH for 4-5 hours, until the pork is very tender and can be easily pierced with a fork. The onions must be tender, transparent, and highly aromatic, and the cooking liquid will have transformed into a brown onion gravy.

Place the cooked pork roast on a cutting board and allow the leftover gravy to drip back into the slow cooker. Rest for 10-12 minutes to redistribute the juices, then cut the roast into thick slices. It must be fork-tender yet retain its shape.

Add the onions and gravy back to the slow cooker and stir. For thicker gravy, simmer on HIGH 10-15 minutes with the lid off, or serve as-is over the sliced pork for a rustic Amish-style presentation.

Place pork slices on a plate, spoon caramel-colored onion gravy and tender onions over the meat, leaving a little gravy on the plate.
