Carbonara Chicken Meatball Subs
Ingredients:
500g chicken mince
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 tsp cracked black pepper
1/2 tsp salt
2 tsp minced garlic
1/2 cup panko breadcrumbs
1 bottle pre made carbonara sauce
Instructions:
Mix all ingredients (except the carbonara sauce) in a bowl to make the meatballs
After washing hands leave them wet as this makes rolling easier and less messy for your hands.
then Roll into small gold ball size meatballs – approx 20
Add the carbonara sauce into your slow cooker
Gently place the meatballs in the sauce and cover using a tea towel trick for about 3 hours on low.
Do not stir or move the meatballs at all until the last hour to ensure they are firm and formed. to ensure they do not break, disturbing them before cooking will cause them to break.
Now you can serve these easy meatballs in sub bread rolls too.
Alternatively serve with fresh vegetables of your choice
