Servings: 6
Ingredients
-
2½ to 3 pounds boneless, skinless chicken thighs (cut off extra fat)
-
¾ cup honey
-
½ cup low-sodium soy sauce
-
¼ cup ketchup
-
3 cloves garlic, chopped small (or 1 teaspoon garlic powder)
Teacher Appreciation Chicken: Directions
-
Spray the inside of a 4- to 6-quart slow cooker lightly with cooking spray so it’s easy to clean.
-
Put the raw chicken thighs flat on the bottom. They can lay on top of each other a little, but try to spread them out evenly so they cook well.
-
In a bowl, mix honey, soy sauce, ketchup, and garlic until it’s a smooth, thick brown sauce.
-
Pour the sauce all over the chicken so every piece gets covered and you see it shiny around them.
-
Put on the lid. Cook on LOW 4-5 hours or HIGH 2-3 hours, until chicken is soft and hits 165°F inside.
-
Use two forks to pull the chicken into shreds or chunks right in the cooker. Stir to soak up sauce. If sauce is runny, switch to HIGH, crack the lid with a spoon, and cook 15-20 more minutes to make it thicker.
-
Taste it. Add a bit more soy for salt or honey for sweet if you want. Serve hot on rice, noodles, or with sides.
