Haven’t made this in a while sweet and sour battered chicken with home made egg fried rice.
For the chicken:
4 chicken breasts cut into chunks
60g corn flour
2 eggs, beaten
60ml olive oil
For the sauce:
100g brown sugar
120ml apple cider vinegar
60ml soy sauce
60 ml water
1 tsp minced garlic
Directions:
In a large bowl all sauce ingredients whisk together. In a separate bowl, season the chicken with salt and pepper then stir in the corn flour and eggs.
Heat oil in a large frying pan and cook the chicken until light golden brown. Transfer chicken to slow cooker and cover with the sauce.
Stir to evenly coat the chicken then cook on High, with lid partially off, for 3 hours or 6 hours on low. Serve with rice or noodles.
