- 1 whole raw beef sirloin tip roast, about 3 to 4 pounds
- 1 packet (about 1 ounce) dry onion soup mix
- 1 cup pepperoncini peppers (about 8 to 10 peppers), plus 1/4 cup of the pepper brine

- Dry the roast. Use paper towels to pat the sirloin tip roast dry on all sides. This helps the beef cook evenly and soak up flavor better. Place the roast in the bottom of your slow cooker.
- Add the soup mix. Open the packet of dry onion soup mix and sprinkle it evenly over the top of the roast, trying to cover as much of the surface as you can.
- Add the peppers and brine. Scatter the pepperoncini peppers around and on top of the roast. Then carefully pour about 1/4 cup of the pepper brine into the slow cooker, letting it run down around the sides of the meat.
- Cook it low and slow. Place the lid on the slow cooker. Cook it on low flame about 8 – 9 hrs, or on high heat for 5 – 6 hours. The roast is done when it’s very tender and falls apart easily when you poke it with a fork.
- Slice and serve. Carefully lift the roast out and set it on a cutting board. Slice it into pieces or shred it apart with two forks, whichever you like best. Spoon some of the cooking juices and a few pepperoncini peppers over the top before bringing it to the table.
