>Potatoes, butter and cut onions sliced in even portions in the slow cooker will be a welcome treat to the family and family will continue to re-order it over and over again.
>Ingredients
3 pounds Peeled, chopped into 1 1/2-inch pieces Yukon Gold potatoes – Creamy, mashing texture
1 onion Thinly sliced Yellow medium- Adds flavor, sweetness
3 cloves Garlic, chopped -Improves taste
1/2 cup (1 stick) Unsalted butter, in pieces –Adds richness
1 cup Low-sodium chicken or vegetable broth — use vegetable broth in case of vegetarian version.
>1/2 cup Warmed half and half or whole milk, – Gives creaminess
1 teaspoon Kosher salt , with more to taste — Necessary to add flavor
1/2 teaspoon Freshly ground black pepper Adds light heat.
>1/ 2 teaspoon Dried thyme (optional) -Optional herby taste.

Step-by-Step Instructions Slow Cooker Irish Potatoes
1. Step 1: Prepare the Potatoes
Potatoes are peeled, and cut into the same pieces, which are 11/2 -inch across, such that they may be equal in cooking.
>Dip them in a little running cold water to wash the rest of the starch out of them and rinse them.
2. Step 2: Layer the Ingredients
Add the chopped onions in the bottom of the slow cooker and the chopped garlic.
Take pieces of potato on the surface, and lay the pieces of butter on the potato in the same manner.
3. Step 3: Season and Add Liquid
Next add salt, pepper and thyme (dried) to the potatoes.
Add the broth on top of it all.
This will not involve immersion of the potatoes into the liquid- of course they will be steamed and simmered.
4. Step 4: Slow Cook Until Tender
Cover and cook:
Low heat: 5-6 hours
High heat: 3-4 hours
Cooked Potatoes: The potatoes should also be cooked soft, and therefore easily mashed with a fork.
