Slow Cooker Irish Chicken Stew. Lucky Day Dinner: With only 5 ingredients. I prepare it when I feel like having a warming, home-cooked food simmering all day long when I am out of the place, so that, as soon as w, I can serve it.

Ingredients

  • 2 pounds chicken breasts, boneless, skinless (cut in 1 inch pieces).

  • 2 pounds russet or Yukon Gold potatoes, washed and diced into 1 -inch cubes.

  • Sliced into 1/2-inch slices 3 large carrots, peeled.

  • 3 cups low sodium broth made of chicken.

  • 1 cup heavy cream (or half-and-half to make it light)

  • 1 1/2 teaspoons kosher salt

  • 1 teaspoon black pepper

Slow Cooker Irish Chicken Stew: Instructions

  1. Lightly use a small amount of oil or cooking spray to grease the inside of a 6-quart slow cooker so the food does not stick to it and it is easy to clean.

  2. Add the cubed potatoes and sliced carrots to the bottom of the slow cooker and spread evenly in the bottom to cook evenly and become really soft.

  3. Place the diced chicken breast over the vegetables, and make it spread out so that the pieces are one, fairly even layer. This aids in cooking of the chicken and keeping it tender.

  4. Combine the chicken broth, heavy cream, salt and black pepper in a medium bowl or large measuring cup and whisk the mixture together until smooth. It will be your creamy savoury stew base.

  5. Add the mixture of broth and cream in the slow cooker and pour it all evenly over the vegetables and the chicken in the slow cooker, ensuring that everything is largely covered. Squeeze any sticking bits softly in order to get them wetted.

  6. Place the lid on the slow cooker and cook on LOW between 6-8 hours or cook on HIGH between 3-4 hours until the chicken is cooked and the potatoes and carrots are very tender. The stew is supposed to be creamy and slightly thick, and as you open the lid, you should see steam.

  7. After cooking, taste the broth and a bit more salt and pepper may be added in case it is necessary.
