Amish Beef and Corn Casserole Slow Cooker. Put canned corn in a ground beef, 3 ingredients, in slow cooker and have a filling meal that is my fallback when I am not sure what to prepare.
Amish Beef and Corn Casserole Slow Cooker
Ingredients

2 pounds ground beef (80-85% lean)

15-15.25 ounces whole kernel corn, drained in 2 cans.

1 can (10.5 ounces) cream of mushroom soup condensed.

1 cup shredded cheddar cheese

1 packet (1 ounce) dry onion soup mix.

Prepare a 5-6-quart slow cooker on the counter and take off the lid. No need to preheat.

Bring the raw ground beef into the bottom of the slow cooker in heaps, and split it up with clean hands or a spoon until it is evenly distributed into the bottom of the cooker in a loose layer.

Evenly sprinkle the onions soup mix all over the raw ground beef and allow it to flavor the meat everywhere.

Take the cans of corn and open them out, empty them, and pour the canned corn into the prepared ground beef in the slow cooker and spread it with a spoon into a uniform layer.

Add the powdered soup of condensed cream of mushroom in a small bowl with half a cup of shredded cheddar cheese and blend it into a fairly smooth mix. (It doesn’t have to be perfect.)

Pour the mixture of soup and cheese over the corn layer taking care not to disturb it too much so that it does not cover the top fully. It will thin out as it cooks.

Follow the instructions of placing the lid over the slow cooker and cook on LOW 5-6 hours or HIGH 3-4 hours until the beef is cooked all the way through and no longer pink and the mixture is hot and bubbly at the edges.

About an hour before the cooking period is complete, stir the mixture down through the layers breaking up any larger chunks of meat. Smooth the top again.

Sprinkle the rest of the 1/2 cup of shredded cheddar cheese on top, cover and cook it on LOW or WARM another 10-15 minutes, but not too long until the cheese melts.

Season and taste and/or add a pinch of salt or black pepper. Dining Serve hot, spooned out of slow cooker.
