Slow Cooker Chicken Curry recipe in a hurry.
Ingredients:
1kg chicken thigh, chopped
200ml coconut milk
250ml cream
1 x 420g can of cream of chicken soup
1 x 50gram dry, chicken noodle soup mix
150gram frozen mix veggies (I used a stir fry mix)
2 big handfuls of baby spinach
Oops!! Forgot the curry part
2-3 tbs keens curry powder
Directions:
Put all ingredients (minus spinach & frozen veggies) in to slow cooker.
Cook on low for 3-4 hours
Add frozen veg around 3 & 1/2 hour
Add spinach 20 minutes before serving.
I served with brown rice.
But you can serve with whatever takes your fancy.
Hubby went back 3 times! Which NEVER happens.
