Slow Cooker Carrot Cake

Slow Cooker Carrot cake. Never made cake it in before.

Ingredients:

3 medium eggs
125g soft brown sugar
125 ml sunflower oil
225g self raising flour
1/2 teaspoon of mixed spice
1 teaspoon of ground cinnamon
200g grated carrots

Slow Cooker Carrot Cake

Method:

Beat eggs in a large bowl. Add sugar & oil, then mix into egg mixture. Add sieved flour & spices, then carefully fold in. Add the carrot into the mixture.
Using a cake liner put the mixture into slow cooker. Cook on high for 2 hours & check. It may need a little longer. Put a clean tea towel under the lid to stop moisture dropping back in to the mix.
When cooled top with cream cheese topping and chopped walnuts if desired.
