What You Need

  • 3 pounds boneless beef short ribs (cut off the extra fat on top)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet (1 oz) dry onion soup mix
  • ½ cup low-sodium beef broth

How To Make Slow Cooker Beef Short Ribs

  1. Put the beef short ribs in the bottom of your slow cooker. Try to lay them flat so they all sit in the sauce while they cook.
  2. In a bowl, mix together the cream of mushroom soup, the dry onion soup mix, and the beef broth. Stir it all together until it looks smooth.
  3. Pour that soup mix on top of the beef in the slow cooker. Make sure all the meat gets covered. Use a spoon to spread it around if you need to.
  4. Put the lid on the slow cooker. Cook it on LOW for 7 to 8 hours, or on HIGH for 4 to 5 hours. The beef is done when it is very soft and breaks apart easily with a fork.
  5. When it is done cooking, taste the sauce. It might already be salty enough because of the onion soup mix, so you probably do not need to add more salt. If you see extra fat floating on top, scoop it off with a spoon.
  6. Use two forks to pull the beef apart into big pieces or smaller shreds. Stir the beef back into the sauce so every piece is coated.
  7. Serve the beef and sauce hot! It tastes great on top of mashed potatoes, rice, or noodles. Pour extra sauce on top and enjoy!
