Slow Cooker Beef Casserole

After seeing all the beautiful beef casseroles , I just had to because it made me want one so much. Even though it is summer here in the UK, I didn’t roast myself out with making one in the slow cooker (I just did that making the Yorkshire puddings) absolutely blooming lovely it was. Without wasting any time move toward the ingredients.

Ingredients:

  • Casserole: 600g diced beef
  • 3 large potatoes, diced small-ish
  • 2 large carrots, diced small
  • 2 medium onions, sliced
  • 2 beef OXO cubes/crumbly stock cubes, crumbled
  • 1 tbsp tomato puree/paste
  • x2 Just Wine sachets or 1 250ml glass red wine
  • 300ml water
  • Salt and pepper to taste

Method:

Throw everything in slow cooker, cover and cook on low for 8-10 hrs…serve with whatever you desire. and if you’re wondering what that green splodge is in the middle of the casserole? It’s mint sauce.
