Slow Cooker Beef and Sweet Corn Stew: Some days the fridge is nearly empty and there’s no time to cook something fancy. That’s when this slow cooker beef and sweet corn stew comes in handy. It only needs five simple things you likely already have at home, and the slow cooker does most of the work for you. Creamy corn gives the stew a soft, slightly sweet taste that goes really well with the beef. It has that warm, homey Midwest feeling — the kind of meal I make again and again on busy mornings when I want something hot and easy waiting for me later.

Try serving this stew with buttery crackers, a loaf of crusty bread, or a slice of warm cornbread to help soak up the creamy broth. A cool green salad, steamed green beans, or roasted carrots can round out the meal nicely. If you want a bigger dinner, spoon the stew over mashed potatoes, rice, or egg noodles for extra heartiness.

This easy slow cooker stew turns just five simple ingredients into a warm, creamy dinner the whole family will enjoy. Ground beef and sweet corn simmer together into a thick, comforting stew with almost no effort. It’s a budget-friendly, hands-off meal that’s perfect for busy days when you still want something homemade and filling.

Servings: 6

Ingredients

  • 1 pound ground beef
  • 2 cans (14.75 ounces each) creamed corn
  • 1 tin (about 425g/15.25oz) sweetcorn kernels, drained
  • 1 packet (1 ounce) onion soup mix
  • 1 cup beef broth

Slow Cooker Beef and Sweet Corn Stew: Directions

  1. Place the raw ground beef into the bottom of a 4- to 6-quart slow cooker. Use your hands or a spoon to break it apart into large chunks instead of leaving it in one solid piece. This helps the meat cook more evenly all the way through as it simmers.
  2. Pour both cans of creamed corn right on top of the beef, spreading it out so it covers the meat. Add the drained sweet corn next, followed by the packet of onion soup mix and the cup of beef broth. Try to spread these evenly across the top rather than piling them in one spot.
  3. Use a large spoon to stir everything together until it’s well combined. Put the lid on the slow cooker and set it to cook on LOW for 5 to 6 hours, or on HIGH for 3 to 4 hours. If you’re able to, stir the stew once or twice while it cooks. It’s ready when the beef is fully cooked through and the stew has turned hot, thick, and creamy.
  4. Take the lid off and use your spoon to break the beef into smaller, bite-sized pieces. Give the stew one more good stir to make sure everything is mixed well. Taste it and add a little extra salt or pepper if you’d like, then serve it hot in bowls.
