  • 2 to 2.5 pounds beef tenderloin roast, cleaned and tied up

  • 1 cup (2 sticks) butter with no salt, cut into pieces

  • 1.5 cups thin slices of shallots (about 6-8 medium ones)

  • 2 teaspoons kosher salt (add more after if you want)

  1. Dry the beef with paper towels. Let it sit out for 20-30 minutes to warm up a bit. This makes it cook even.

  2. Peel shallots and cut them into thin slices. Thin ones get soft and sweet in the butter.

  3. Put shallot slices flat in the bottom of a 4- to 6-quart slow cooker. Sprinkle 1 teaspoon salt on them.
