3 to 3½ pounds corned beef brisket with its spice packet

1 big yellow onion, peeled and cut in thick slices

4 medium carrots, peeled and chopped into 1½-inch pieces

4 cups ginger ale (not the diet kind), or enough to almost cover the meat

Put onion slices in a flat layer at the bottom of a big slow cooker. Add carrot pieces on top to make a soft bed for the meat.

Rinse the corned beef under cool water. Pat it dry with paper towels to wash off extra salt so it’s not too salty.

Place the beef on the onions and carrots, fat side up. Sprinkle the spice packet evenly over the top.

Pour ginger ale around the sides until it comes most of the way up the meat. Leave the top showing above the liquid.

Cover and cook on low for 8 to 10 hours, until super soft and a fork goes in easy. Don’t peek too much or it takes longer.

Move beef to a cutting board and rest 10 minutes. Scoop carrots and onions to a dish with a spoon.

Skim fat from the liquid if you want. Spoon some warm broth over veggies. Save extra for the table.

Cut beef across the grain into ¼- to ½-inch slices. Put on a plate with veggies and drizzle hot broth to keep it moist.
Serve sliced beef with soft carrots, onions, and broth. It’s great with mashed potatoes to sop up juices or in sandwiches with mustard. Add green beans or salad on the side. Leftovers make tasty hash with potatoes and egg.
Variations & Tips
Try half ginger ale and half beef broth for less sweet taste; fizz still softens it. Add peppercorns or bay leaf with spices for more kick, but swap to keep it 4 items. Use parsnips instead of carrots if you like. Check thick meat at 10 hours. Reheat leftovers in broth, or boil it down for sauce. Broil top briefly for crisp edges.
