Ranch or crack chicken. Going to make the best pasta/jacket filling ever.
Ingredients:
4 large chicken breasts,
2 packs of Philly Lightest (could use whichever you liked but this works just fine),
6 bacon medallions,
1 pack of dry ranch dressing mix (can buy this from Amazon or eBay but the supermarkets sell it in dressing form),
100g cheddar,
40g Red Leicester
5 spring onions
Method:
Put the chicken breasts, Philly and ranch dressing in the slow cooker and I did 4 hours on low and then the final hour on high. Then shred the chicken with two forks, it will fall to pieces by that time. Add the cooked diced bacon and stir through. Then add the grated cheese on top and scatter the chopped spring onion on top of that. Pop the lid back on and wait until the cheese has melted. Then stir through and serve. Easily serves 5.
