Pineapple upside down cake! I’ve never made a cake in the slow cooker before but I love this in the oven so thought I’d try it in the slow cooker so it would be ready straight after tea and I could use the oven for our meal so it was convenient to have pudding in a separate appliance ready and warm.
Ingredients:
50g softened butter
50g light brown sugar
7 pineapple rings, drained
7 glacé cherries (I use more)
Melt the butter and sugar in a pan, when well blended pour into your slow cooker (I lightly greased mine but I have a non stick cooker you may have to use greaseproof paper) let it set a little (slow cooker switched off still) make your cake mix or use a packet mix your choice I made my own,
100g softened butter
100g of golden caster sugar
2 eggs
100g of self raising
1tsp vanilla extract
1tsp baking powder
Directions:
Whisk all ingredients together in a bowl
Place pineapple rings on the sugar and butter mixture that’s in the slow cooker , place the glacé cherries in the middle of the rings and in any gap if you love your cherries, pour cake mix in, switch the slow cooker on high, tea towel over, lid on for 2 and half to 3 hours, when done (use oven gloves!)take the insert out of the cooker part get a dish or plate underneath the sponge turn upside down so the pineapple pattern is on top, sorry had to type it all out.
