If you ask me, itβs been far too long since we had my mums caramel dumplings recipe slow cooked again ππ and tonight seemed the perfect time for a night treat for us π€ They were incredible yet again, as usual πππ Somehow π€ my maths was a little off tonight so we ended up with 16 dumplings instead of 12 ππ I cooked these in my 6lt slow cooker π
Mumβs Caramel Dumplings
Caramel Sauce :
2 TBS/40gm butter
1 cup brown sugar, firmly packed
2 cups boiled water
Dumplings :
1 1/4 cups SR flour
1/4 cup white sugar
3 TBS/60gm butter
1 tsp vanilla essence
1/3 cup milk
Method :
1. Place butter and brown sugar in sc bowl, add boiled water and heat on high with lid on while preparing dumplings.
2. For dumplings sift flour into a mixing bowl and add sugar. Rub butter into flour mixture until well combined.
3. Add vanilla essence and milk and mix until dough becomes quite soft. Form dough into 12 to 16 even sized balls.
4. Remove lid from sc and carefully place dumplings into sauce one at a time. Cover using tea towel under lid and continue to cook on high for approximately 50 mins depending on sc.
5. Serve with vanilla ice cream, enjoy π
Note : store leftovers in an airtight container and reheat in microwave for a quick snack/dessert π
