Lemon & Lime Delicious Pudding. This was a lovely tangy pudding, but not too sour.
Ingredients:
180g softened butter
1 1/2 cup caster sugar
2/3 cup self raising flour
Juice of one lemon
Juice of one lime
Zest of one lemon
Zest of one lime
3 egg yolks
1 1/2 cup milk
4 egg whites
Method:
Place 1 1/2 cup water into slow cooker and set to low.
Beat well butter & sugar in a bowl.
Mix in both zests & juices.
Stir in flour.
Combine egg yolks and milk in a bowl, then add to batter.
Beat egg whites until soft peaks form, then fold through batter.
Spoon into greased pudding bowl and cover lightly with foil.
Place pudding in water bath in the cooker, cook on low for 5 – 6 hours.
(I removed foil after 3 hours and put a tea towel under lid for remaining cook time).
Serve with cream or ice cream. ENJOY
