Lemon Drizzle Cake

Slow Cooker Lemon drizzle cake to take down to my son
Very please with it.

Ingredients:

250g of self raising flour
250g of margarine/ butter
4 eggs
1tsp of baking powder
250g sugar
Lemon zest from one lemon

Method:

Whisk sugar and butter until creamy than add egg slowly and add flour and zest
lined bottom of slow cooker.
Put ingredients to cook for 3 hours on high with tea towel to cover the top
Skewer to see if it comes clean if it does is cooked leave until cool
When cool poke cake with skewer
Mixed juice of a lemon and 25g of lemon juice and drizzle in the holes you poke and enjoy
Be better to bake in loaf tin as can sliced better but my slow cooker is round and loaf tin won’t fit.

(Only line the bottom with grease proof paper( trace the bottom of slow cooker and cut slightly bigger.)
