Slow Cooker Lemon Curd Sponge Pudding
Ingredients:
2oz butter
2oz SR flour
2oz caster sugar
1 egg
Tablespoon of Lemon Curd
Directions:
Grease basin ( I used a glass Pyrex)
Put lemon curd on the bottom
Beat other ingredients together (all in one method) until combined.
Put cake batter on top of lemon curd.
Put a piece of foil over the top and tuck around to make a nice fitting lid.
Put pudding bowl in SC
Boiling water in the slow cooker about 1/3 of the way up the pudding bowl.
Put tea towel over the lid of the slow cooker.
Mine took 90 mins on high.
I only wanted a small pudding – double the ingredients for a family sized pud.
Could make loads of variations on this theme.
