Put the uncooked chicken breasts in the bottom in a single layer of your slow cooker. Overlapping is fine.
Add the honey, sriracha sauce, soy sauce, rice vinegar and toasted sesame seeds in a medium bowl and shake until smooth.
Minced garlic and ginger (when available) may be added to the sauce mixture to add flavor.
Pour the mixture into the slow cooker and over the chicken gradually, making sure it is coating the chicken.
Gently shake the chicken to expose the sauce under and between chicken.
Cover and cook:
LOW: 3 1/2 to 4 1/2 hours
HIGH: 2 to 3 hours
Chicken is cooked when it is shredded with a fork.
1. For a thicker sauce:
Combine slurry of cornstarch and cold water.
Add liquid into the slow cooker.
Bake on HIGH 10-15 minutes until slightly thickened.
2. Use two forks to shred chicken and put back in the sauce.
3. Taste and add sweetness or spice (at your discretion).
Top using cooked rice and serve with sesame seeds and green onions.
Enjoy warm.
