Gluten Free Golden Syrup Sponge

Slow Cooker Gluten Free Golden Syrup Sponge

All ingredients are gluten free

175g free from self raising flour
175g gluten free butter (I used one called Pure)
3 eggs
2 tsp vanilla essence
175g caster sugar
3 tbsp golden syrup (which is already gluten free) plus extra for when it’s cooked




Method:

Add the butter and caster sugar in a bowl and whisk.
Add in the 3 eggs and 2 tsp of vanilla essence and whisk.
Sieve and fold in the flour.
Add the golden syrup to the bottom of a smallish glass bowl then pour the cake batter on top.
Cover the top of the bowl with tin foil and place in the middle of the slow cooker.
Pour in water to cover up to quarter way of the bowl.
Put the slow cooker lid on and cook on high for 4 hours.
I drizzled the extra golden syrup over the top when it was cooked and serve with either custard or single cream..
