Friendly Slow Cooker Cabbage Soup

Rich protein cabbage soup in a slow cooker. It is simple, gratifying and fits well for any individual who is living the bariatric lifestyle.
Ingredients
Protein:
Lean Ground Beef (93/7) or Ground Turkey (1 lb)
Choose ground turkey as a leaner option
Vegetables
Green Cabbage, chopped into 1-inch pieces
1 medium head
Adds bulk and fiber
Onion, diced
1 medium
Garlic, minced
2 cloves
Enhances flavor
Carrots, sliced into rounds
2 medium
Celery, sliced
2 stalks
Liquid & Base
Diced Tomatoes (no salt/sugar added)
1 can (14.5 oz)
Provides acidity and richness
Tomato Sauce (no added sugar)
1 can (8 oz)
Thickens the soup and enhances the tomato flavor
Low-Sodium Beef Broth (or Bone Broth)
4 cups
Use bone broth for extra protein and nutrients
Seasonings
Dried Oregano
1 tsp
Adds herbaceous flavor
Smoked Paprika
1 tsp
Salt and Pepper
To taste
Adjust based on preference
Optional
Apple Cider Vinegar
1 tbsp
Adds a tangy “zip” without adding sugar
Instructions
Cook the Protein:
>>>>>Bring the ground beef or turkey to a skillet and cook it on medium heat until it is brown all over. Drain all the fat content to render the soup light and bariatric.
Prepare the Base
Cut up cabbage, carrots, celery, onion and garlic and place them in the slow cooker.
Combine Ingredients
The cooked meat should be placed on the vegetables. Sauté the diced tomatoes which are diced, tomato sauce and broth.
Seasoning
Add oregano, pepper, salt, and smoked paprika. Gently stir to mix all about.
Slow Cook.
Low 6–7 hours or high 3–4 hours respectively until cabbage is soft and all flavors have been incorporated.
Adjust Flavor
>>>>>It should be served when it is cool and add a splash of vinegar (apple cider) to it in case you want a bit of tangy taste.
