Slow Cooker Dutch Pea & Ham Soup
Ingredients:
2 packets green split peas, soaked overnight
2 small ham hocks
1 onion, grated
2 potatoes, peeled and chopped
1 carrot, peeled and grated
2 stalks of celery, chopped
1 Rookwurst Sausage
1 Liter Vegetable Stock
Directions:
Place soaked peas, ham hocks & all vegies into slow cooker. Pour stock over. Cook on low for 7 to 8 hours. Remove hocks and allow to cool enough to handle so you can remove the meat.
At this point, I blitz the peas & vegies together (Hubby likes it smooth)
Slice the Rockworst up, add it & the meat from the ham hocks back to the slow cooker & stir, heat through adding a little water if you like a thinner consistency.
Serve with fresh crusty bread
