Ingredients

  • 1 pound ground beef

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 4 large potatoes, peeled and diced

  • 3 large carrots, sliced

  • 2 celery stalks, sliced

  • 4 cups chicken or beef broth

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • 1 cup heavy cream

  • 2 cups shredded cheddar cheese

  • 1 cup milk

  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)

  • Fresh parsley, chopped (for garnish)

  • Extra shredded cheddar cheese (for garnish)

Crockpot Creamy Potato & Hamburger Soup: Directions

  1. Brown the beef: Heat a large skillet on medium-high. Cook the ground beef until all the pink color is gone. Drain extra fat. Add the chopped onion and minced garlic, and cook about 5 minutes until the onion looks clear.

  2. Put in the crockpot: Move the cooked beef, onion, and garlic into the crockpot. Put in the chopped potatoes, carrot slices, and celery slices.

  3. Add broth and spices: Pour in the chicken or beef broth. Add thyme, parsley, paprika, salt, and pepper. Stir everything together.

  4. Cook slowly: Cover the crockpot. Cook on low for 6–8 hours or on high for 3–4 hours, until the potatoes and vegetables are soft.

  5. Make it creamy: Stir in the heavy cream, shredded cheddar cheese, and milk. If you want thicker soup, mix the cornstarch and water and add it now. Stir well.

  6. Finish cooking: Cook on low for another 15–20 minutes, until the cheese melts and the soup is creamy.

  7. Serve: Spoon the hot soup into bowls. Sprinkle with fresh parsley and extra cheddar if you like. Serve with crusty bread.
