What You Need (makes 4-6 plates):

2 pounds beef for stewing or sirloin tips

2 spoons olive oil (if you want to brown the meat first)

1 onion, cut into slices

3 cups mushrooms, sliced up (like button or cremini kinds)

3 garlic pieces, chopped small

1 pack onion soup mix

1 cup beef juice (broth)

1 spoon Worcestershire sauce

Half spoon paprika

1 spoon dried thyme (if you like)

1 cup sour cream (or thick cream)

2 spoons cornstarch mixed with 2 spoons water (to make it thicker, if you want)
How to Make Crockpot Beef Tips & Mushrooms

Brown the meat (it’s better this way, but you can skip):
Get a pan hot with olive oil on medium-high. Quickly cook beef on all sides till brown (2-3 minutes). Put it in the slow cooker. -
Add the veggies and spices:
Put onion slices, mushroom slices, and chopped garlic on the beef. Shake on the onion soup mix, pepper, paprika, and thyme. -
Pour in the wet stuff:
Add beef juice and Worcestershire sauce. Stir it all lightly. -
Cook slow:
Put the lid on. Cook on low for 6-8 hours or high for 3-4 hours, till beef is super soft and easy to cut with a fork. -
Make it creamy:
30 minutes before eating, mix cornstarch and water, then stir it in (for thicker sauce). Add sour cream (or thick cream). Put lid back on for 20-30 more minutes. -
Taste and eat:
