This easy slow cooker meal is my go-to when the day gets busy. I still want food that tastes like it came from my mom’s old farmhouse kitchen. It’s a simple 5-ingredient dish like Amish chicken pot pie with soft, buttery noodles we love in the Midwest.

Amish Chicken Pot Pie Noodles Slow Cooker 5-Ingredient
Ingredients
-
2 pounds boneless, skinless chicken breasts
-
1 bag (12–16 ounces) of frozen mixed vegetables like peas, carrots, corn, and green beans
-
Use 2 cans (10.5 ounces each) of cream of chicken soup
-
3 cups low-sodium chicken broth
-
12 ounces extra-wide egg noodles
Amish Chicken Pot Pie Noodles: Directions
-
Lay raw chicken breasts flat on the bottom of a 5- to 6-quart slow cooker.
-
Pour the frozen mixed vegetables right over the chicken—no need to thaw them first.
-
In a bowl or big measuring cup, whisk the cream of chicken soup and chicken broth until smooth. This makes your easy base with just those three things plus the chicken and veggies.
-
Pour the soup mix over the chicken and veggies. Let the liquid sink around everything—don’t stir.
-
Put the lid on and cook on LOW for 5–6 hours, or HIGH for 3–4 hours, until chicken shreds easily with a fork.
-
Use two forks to pull the chicken into small pieces in the cooker. Stir gently to mix chicken, veggies, and broth.
-
Add egg noodles right into the hot mix, pushing them down into the broth.
-
Cover and cook it on HIGH flame for 20–30 minutes. Stir once or twice until noodles are soft but not soggy. Add a bit of extra broth or water if it’s too thick.
-
Try it, and add some salt or pepper if you like. Scoop into bowls and serve warm—the noodles stay silky and the broth creamy.
Serve in big shallow bowls so broth and veggies hug the noodles. It’s filling alone, but great with a simple salad, applesauce, warm rolls, or bread to soak up the sauce. Pair with cold milk or iced tea for that homey feel.
